21 Feb Le Pratola Recipes from our chef Monica Lapis

We love eating al fresco at Le Pratola and we have some wonderful chefs who can prepare delicious dishes for our guests- often using fresh produce direct from our garden.

Tomatoes are so typically Italian and we love this very simple recipe for tomatoes prepared by Monica. They are wholesome, healthy and can be eaten either as a starter or as a side dish. Try them at home.

You will need:

Fresh, ripe tomatoes

Fresh chopped herbs: thyme, marjoram, parsley, basil, garlic

Breadcrumbs (fresh or bought ok too)

Extra virgin olive oil (Le Pratola best of course but use other good quality if not available), salt and pepper

Cut the tomatoes in half, place them on a baking sheet with parchment paper. Mix together the chopped aromatic herbs, add the breadcrumbs (just enough to cover all the tomatoes), salt, pepper and extra virgin olive oil, stir everything and then cover each of the tomatoes with the herb mix. Bake in preheated oven at 180 ° and cook until golden.
